  • Canning Tomato Sauce

    We gathered the tomatoes from the garden and washed them

    We cored and peeled them then cooked them with basil, garlic and salt

    Then we put the sauce in the jars and canned it .
     

    I used some of the sauce to make Galumpkis or "Polish Cabbage Rolls"
    but I used Kale instead of Cabbage because the cabbage in the garden wasn't ready
    but we has a lot of kale.
    I sauteed 1 medium finely chopped onion and mixed it with
    2 pounds ground beef
    added garlic, salt, pepper and onion salt
    and add in 3/4-1cup uncooked rice
    (most recipes call for cooked rice but we have always used raw rice,
    it works and is easier)
    I cooked the kale lightly to make it pliable

    I made meatballs  and wrapped them in kale

    placed them in a baking dish

    I poured a jar of the sauce over the top

    and baked them, they were really good.

  • Love the wheel barrow wash basin!  Mine is laced with horse poop~ wouldn't make for a good wash tub.

  • @Ikwa - I think you have one of the prettiest blog sites, and your writing is a song  I wish that I was still young and pretty like you, only I always looked better in red than blue,  Your photos almost make me weep for a time now passed.  You are so wonderful;   But let me guess;  You haven't won any pillsbury bake off contest;  Have you?  Honey,  that rice needed more cooking, for I can tell by looking.  Most of your ingredients go not include the F word as in fresh, and Holy of Holies;  Where is that basil and oregano with the F. word, and I hear mother earth crying for the garlic heads hide in shame.  The kale I could enjoy, but, I want a confession here and now;  Did you trim that thick membrane, and do you know it is loaded with vitamin K which is the antidote to the rat poison, warfarin, which I must take now to live having had a bilateral pulmonary embolism and living to tell the story...Were these cabbage rolls, or kale things.  You'll be a better woman to tell the truth!!

  • @PinkHoneysuckle - I did not trim the kale, I used the whole leaf ,  these were the kale rolls, The rice was tender after the rolls were baked but no, I have never entered nor won a Pilsbury cook off,have you? When we made the sauce we did use beautiful fresh basil from the garden,no oregano though.

  • Oh my friend;  take me not wrong; for your pictures would win a prize and your helper deserved one, and you got me;  No Pillsbury Bake Off for me.  Two cooking contest I have won;  One, a cherry pie, but a friend's mother made the filling, and then the biscuits that won me the 4-H pin came straight from my mother's bin.  I am feeling some ease, because you used the sweetest basil, and my hope is for atonement.  Here I not only critiqued your great cooking, but then I had to confess both bragging, forgery, and telling lies, as my Mama turns over in her grave.  We Scot Irish are like that though, and my secret to why some believe I am a fine chef will go to my grave even to kin and wives of kin, for only our blood linecan bear the truth, and it is not CaMsrSp;  No, much more grand, my discovery, and sadly I fatten up a dehydrated mouse, for it is that good.  It led me to the X sizes though, so enjoy the kale.  I do not fancy death by Coumadin and Vatamin K, and you'd be the obvious suspect.

  • Beth, that looks delicious!! I remember those canning days all too well.  I do miss it. About all I do now is jams and preserves.

  • That is a LOT of tomatoes.  I used up all my jars for tomato sauce, and all of my storage space for the jars, no more.  I gave away all of the other tomatoes.  Thanks for the recipe, my mother didn't make cabbage rolls until she remarried.  Then, her sister-in-law taught her their family recipe.  I would like to make some.

  • Our garden failed miserably this yeaar. Something about not having near enough sun (or heat) to make anything want to grow. I'm jealous of your massive amounts of cannable tomatoes! (not cannibal tomatoes, that would be scary)

  • You have been busy!  I have never seen a dish like that with the meatballs and kale. I have a new job now, health unit coordinator and start my 2nd week of orientation tomorrow.  I will have 2-3 weeks of orientation on the unit I will work on when I finish this 2nd week of classes.
