  • Pumpkin Soup, yeah, it's That Good!

    When I tried to cut these small pumpkins I couldn't, they needed to be sawed.

    When I cooked them the shell remained hard.
    So I got the idea to use it as a bowl,
    It worked!

    Last night was Family Dinner Night
    and we had an Orange Meal


    I made Pumpkin Soup combining a few recipes I saw online

    Pumpkin Soup
    1 med onion diced and sauteed in butter
    5 cups chicken stock
    1 1/2 teaspoons salt
    1 T chicken Bullion
    4 cups pumpkin puree

    2 cups cream
    1 teaspoon Nutmeg
    I sauteed onion, added all but the cream and nutmeg, brought it to a boil,
    reduced heat, simmered for 30 min or so, added the cream and nutmeg
    They say to puree it before adding the cream but I didn't , it was fine.


    This was so good ,even all the kids liked it.

  • Yummy and gorgeous! You have very luck people with you in their lives. BTW: Our school's pumpkin patch operates off of volunteer parents.  When I was working it one afternoon, several of the other moms were talking about how to cook or prepare the many varieties of squash and pumpkins. I suggested this very idea and I believe I can still smell a lot of soup in the air. :) Love it!   • I had to come over when I saw your title. The first time I had pumpkin soup was many years ago in Haiti. It was really good! I'd never heard of it before. Brought back memories. I'll have to try it again sometime. Love the orange theme.

  • This soup is one of the soups I prefer . I add a bit of suggar in powder in the plate before eat .
