  • Pumpkin Time

    Here are a few of my pumpkin pics from over the years



    A few years ago I picked up my nephew from school everyday.
    On the way home we would often stop to do fun things.
    I took one of my all time favorite photos on one of those days!
    I call it "Jack-O-lantern Smile"

    Old Fashioned Pumpkin Custard
    Ingredients:

    2 Cups cooked pumpkin
    4 egg yolks
    1/2 tsp. cinnamon
    1/4 tsp. cloves
    1/2 tsp. salt
    4 egg whites beaten stiff
    2 Tablespoon melted butter
    1 1/2 cups sugar
    1/2 tsp. nutmeg
    3 cups milk
    1/2 cup flour

    Directions:
    Mix pumpkin, flour, egg yolk, salt, sugar, butter, and spices.
    Fold in egg whites.
    Pour into 2 9-inch pie crusts.
    Bake at 450 degrees for 15 minutes,
    then at 350 degrees for 45 minutes, or until firm.


    Spiced Pumpkin Seeds
    Ingredients
    1 1/2 tablespoons margarine,melted
    1/2 teaspoon salt

    1/8 teaspoon garlic salt
    2 teaspoons Worcestershire sauce
    2 cups raw whole pumpkin seeds
    I like to add 1/2 tsp chili powder and
    1/4 tsp Red Chili Pepper Powder or some hot sauce

    Directions
    Preheat oven to 275 degrees F (135 degrees C).
    Combine the margarine, salt, garlic salt and spices
    Worcestershire sauce and pumpkin seeds.
    Mix thoroughly and place in shallow baking dish.
    Bake for 1 hour, stirring occasionally.
