  • One Good Cake and some Funny Posts

    This is my last post for " Laugh Week "
    I hope you have enjoyed it!

    My Mother-in-law Ida had a Coffee Cake recipe using buttermilk that she made often
    from a very old recipe.
    She had friends who owned a large dairy store
    and when the goods were past the "sale by date" they brought them to Ida
    who never let anything go to waste.
    Whenever people wanted to get rid of clothing, appliances, furniture, toys,
    extra food or pretty much anything else,
    they called Ida to see if she knew someone who could use it.
    Ida had a ministry with the needy folks in the area
    and she found a home for almost anything.

    When the dairy products came there was always like 100 quarts of buttermilk.
    Ida found all kinds of recipes using it and passed them out with it.
    Ida was known for her Buttermilk Coffee Cake.
    I made a lot of it at home before I got married and everyone loved it.
    The recipe makes a few cakes so you always have one or two
    to give away and some to eat.
    Soon after we got married I made a batch of the cakes
    and took one downstairs for my in-laws.
    After supper my father-in-law John stopped me to tell me that
    was the best cake he ever had and could I give Ida the recipe.
    I told him "Ida gave ME the recipe."
    He said "Ida never made THAT cake!"
    I was so confused (Like the old man in Moonstruck)
    I went to ask Ida about it .
    She thought for a moment and then laughed and said
    "Did I forget to tell you that I don't use all the sugar the recipe calls for?"
    I said "Yup!"
    No wonder he liked it better!

    Ida's Buttermilk Coffee Cake
    4 Cups  Brown Sugar (Ida used 3 Cups)
    5 Cups Flour
    2 Teaspoons Nutmeg
    1 Cup Lard or other shortening

    Make crumbs with this and set aside 3 handfuls in another bowl
    for the crumb topping.
    Mix 2 teaspoons Baking Soda into 2 Cups Buttermilk
    and mix it with the crumbs not set aside.
    Pour batter into pie tins and cover each with a handful of  the reserved crumbs.
    Bake for 30-40 minutes at 350.

  • Mmm, I want to make Ida's cake, too!  But I think I'll make it YOUR way, since I have quite a sweet tooth!    Does the recipe make 3 cakes (and is it 9" pie pans that you use)?  Haha, love the "Could you give Ida the recipe?" from your FIL!  LOL

  • @Still_groovy - I think it made 4 but I do not remember for sure,I have some buttermilk and want to make some.

  • Sounds like a wonderful cake.  I make a similiar one using sour cream but I'll bet the buttermilk is better batter!

  • This was a hoot. For the last laugh, I just finished my aunt's recipes and one was making graple jelly. The ingredient listed 1 1/2 cups sugar and 1 cup juice. that's it ! I guess you're suppose to KNOW you need grapes!
