Making Sauerkraut
We make Sauerkraut every year to go with the hot dogsthat we serve at our annual Poinsettia Show.

Here is a post about the Poinsettia Shows' )First we harvest cabbage from the garden
Clean the cabbage and quarter it.
Shred it,we use a meat slicer for this quanity
Add salt and stomp it into the crocks and buckets.
Then we let it sit and rot until the Poinsettia show.

You have swan cabbage!
Sit and rot? I had no idea! I thought it was a vinegar that made it so sour, like in pickles. I like sauerkraut, but only when it's been rinsed of the sour brine and then a bit of sweetener added before it's cooked with the meat. Nom NOM!

Cool duck or maybe swan. I love sauerkraut! My husband hates it and the smell. I have never made my own. What a smart idea to use a meat slicer! Your use of the word rot made me chuckle...maybe that's what my husband's main thought is too!

You know what's really weird is that I've never actually tried it...I can't get pass the smell!! Looks like fun though....
The only way I like saurkraut is with sour cream and pork...never cared for it until I found this recipe...but I think it's cool seeing it made. Do you all just use it for your own use? That looks like a lot of kraut!

We serve 6000 people hotdogs at the Poinsettia Show,the Kraut goes fast!
I remember my mom making kraut when I was just a little tot, and packing it into the big crocks. I loved it then and I still do. But we didn't have ducky cabbage like you do. Does it taste any different?

I remember making sauerkraut with the youth group at your house... fun times! I miss you and Berks County and I will be sorry to miss the Poinsettia show this year. But absence makes the heart grow fonder (it's true), so 2010 will be all the better!
Not a fan, but making it looks like fun! My Dad was Pennsylvania Dutch, and we always had sauerkraut. I remember coming in the door from school and being able to smell that it was being made. Whew!
