70 pints! WOW! Are you feeding an army there? I remember once in late summer I canned many, many jars of French plums. They were so easy to do, and looked so pretty all purple in the jars. However.......... my family was not so crazy about eating them as I was canning them! LOL! I eventually had to dump them all.

Oh, that looks divine! And like a TON of work! But so worth it! Are there onions in your salsa? Salsa is my son K's favorite thing. He cam eat chips and salsa forever, and then he's too full for dinner. We are trying to get him to not turn the chips salsa-side down, on their way from the bowl to his mouth!
