    MAKING SAUERKRAUT

    We make quite a bit of sauerkraut and hotdog relish in the fall to use for the annual Poinsettia Show that we have in our Greenhouse in December.Around 5,000 people usually  come to see the show.We give out hotdogs to everyone,the people really look forward

    to the homemade relish and kraut.

    My husband harvests the cabbage from the garden

    We clean it,quarter it,and shred it.

    Measure it,add salt and pack it in the old crocks.

    Stomp it down with a big wooden stomper,to bring out the natural juice called brine.

    (I made her that skirt using an old pair of jeans for the top)

    We cover the kraut,then let it sit and rot!  (EDIT: ferment)

  • Holy Cows in India, Batman!  That's a lot of cabbage!  So, what will you do with all that kraut?  Ya' know, kraut just has never called out to me, tempting me to try it.  The thought of cooked cabbage . . . and now you say it sits and rot?  Yeah, I'll take it fresh'n raw w/a little olive oil'n vinagre; or good ol' slaw.   Oh, and how long does it sit in there to rot?  It's not really rot, is it?  It's just a terminology/fermentation type, right?  Please, please tell me it's that.

  • Mm Mmm! Sauerkraut! Call me when it's ready...I want some! I make some mean sauerkraut and pork, with homemade mashed potatoes on the side. Okay, my mouth is watering! I've never made homemade kraut before, but I think it would be cool.

  • You're the coolest! I like that you make so many things yourself just by using stuff you grown in the backyard. I never tried Kraut because it looks gross. I know I might be missing out but, I don't eat anything I don't like the look or smell of....unless i'm really hungry.

I suppose I could've put up my own booty, but it's take up the entire screen, and you'd have to use the scroll bar cuz of the droop!  hehe ehe.  I'm doing the world a favor, this one is nicer, younger, firmer rounder . . .  it's really the hand doing the grabbin' that catches my eye, and imagination.

  • ah, the classic PA staple of saurkraut- a must have in our traditional meals- i think for New Years, and possibly Thanksgiving- I get them all confused anymore... all the same it's yummy!

  • My husband likes saurkraut but I'm not very fond of it....It must be his German Heritage.

  • I LOVE sauerkraut. I love it so much that I order the hot dog and sauerkraut without the hot dog.
    There is nothing like a fermented vegetable for good digestion and good health.
    I love the stomper and that huge crock!
    What a wonderful tradition you are teaching your sweet helper too.

    I love sauerkraut and caggage, in general.  Raw or cooked, doesn't matter to me!  My mom used to make something called "winter salad" with sauerkraut, onions, caraway, and a bunch of other veggies.  So good!  I love cabbage in vegetable soup, too!

    I am Irish, so on St. Paddy's Day, there is a lot of cabbage with the potatoes and corned beef!

  • I love saurekraut and a good grown up hotdog (Kabalsa) on a bun with a touch of mustard... and a couple of Tums in about an hour or so after consumption.

    I saw a saurekraut festival somewhere, but I have no idea where.

  • Your cabbage crusher is a real cutie! Gotta admit that my favorite way to eat cabbage is fresh in homemade slaw or cooked & stuffed with beef & rice, though. Oooooh now you've gone & done it! I'm hungry again.....

  • RYC- I am american, born in SC. My family is in WV, and last winter we transplanted to Helsinki finland so that my husband could take a job. He is from WV as well. We spent the majority of the last 10 years before moving to Finland in Southern Ca. We left San Diego (72 degrees F) and landed in Helsinki, (-21) Culture shock for me!

    I am the only one in the house who will eat sourkrat everyone else turns their nose up at it. So when i buy it it last me awhile.

  • My mother used to make her own kraut. I did once. I like it once in awhile, but not enough to make a batch. I love weiners and saurkraut. My father was a farmer and made ensilege for the cows from the corn stalks after the corn was picked. It was fermented like kraut and tasted a lot like it.

  • I LOVE this post-you have the neatest things on here!  My family roots are from Poland, and they use a lot of kraut in their foods.  I would have never imagined it was this easy to make sourkraut and I am very intrigued.  How long does it ferment?  Your pictures are fascinating.  I love the skirt you made-is this your daughter?  She's adorable!

    Can I ask you what the hotdog relish is?  I thought that was chopped sweet pickles-not sourkraut.  Very interesting!

  • It's not SauerKraut, it's "Victory Cabbage" and has been since 1917.

    It is amazing at what makes featured.   You and the Sauerkraut, me and the history.     Of course, there's always some chick in a bikini in there too.

  • ah, thank you for the hot dog relish recipe!  I enjoyed the website-is this your family's greenhouse?  That would be so cool, although my own small garden keeps me busy enough.  I have always heard that people put different things on their hotdogs according to their location.  It must be the east that likes sourkraut on hotdogs.  I'll have to try this someday.  Have a nice week!
